Pasta Primavera

Pastas can be healthy!

Pasta dishes don't always have to be creamy, cheesy, or heavy. It's easy to make healthy, simple, and nutritious dishes in less than 30 minutes. Here is my all time favorite pasta dish.

Pasta Primavera
                             

Recipe: (Serves 2) 
Ingredients 
  • 1 Aubergine
  • 1 Zucchini 
  • 3 Broccoli florets
  • 1 Carrot peeled
  • 3 Celery sticks
  • 1 Garlic head with peel 
  • 2 Tomatoes peeled
  • 1 Onion 
  • Your favorite pasta 
  • Parmesan cheese
  • Olive oil 
  • Sea salt 
  • Pepper
  • Fat free fresh cream 
Directions 
- Cut all the veggies in small sized cubes 
- Preheat the oven to 250 degrees Celsius 
- Put all the veggies in an oven pan, season with sea salt and black pepper
- Drizzle olive oil over the veggies 
- Place the veggies in the oven for at least 30min and keep stirring them while they are grilling
- Keep them in the oven until they reach a soft consistency
- In the meantime, boil your favorite pasta and then drain out the water
- In the same pasta pot add the veggies and mix in the pasta 
- Add 2 Tbsp of fresh cream and 3 Tbsp of grated Parmesan cheese over the pasta and mix
